Trunk Show Treats: Strawberry Ombre Creamsicles

Today on Flourish, we are honored to share a delightful recipe from Kelly at Nosh and Nourish. Kelly created these delicious Strawberry Ombre Creamsicles as a part of a little Noonday Giveaway we teamed up for. But they look so mouth-watering, we just had to share on the Noonday blog too. These easy to make-ahead Trunk Show treats are unexpectedly healthy. We can’t imagine a better pick for a summer playdate with a purpose.

Ingredients

  • 4 strawberries, greens removed
  • 1⁄2 cup Silk Vanilla Almondmilk
  • 5 1⁄3 ouncesSilk Strawberry Dairy-Free Yogurt Alternative (or strawberry Greek yogurt)
  • 1 small banana
  • 3⁄4 cups acai berry juice (or your favorite juice)
  • 1⁄4 cup organic cane sugar (or coconut sugar)
  • 6 strawberries (greens removed)
  • 1⁄2 small roasted beet*
  • 1⁄4 cup organic strawberry jam

Yields 10 creamsicles

Instructions

  1. Dice the 4 strawberries, then add equal amounts into the bottom of each popsicle cup.
  2. In a high powered blender, combine the almond milk, yogurt, and banana. Blend until smooth.
  3. Pour the mixture into the popsicle mold, filling each cup up 1/3rd of the way to the top. (There will be a little extra leftover mixture in the blender, but that’s good!)
  4. Put the popsicles in the freezer for an hour.
  5. Meanwhile, do not clean out the blender. Leave the leftover mixture and then add in 3/4 cup acai juice, 1/4 cup sugar, and 6 additional strawberries. Blend until smooth.
  6. Once the bottom white layer is thoroughly frozen, pour on the 2nd strawberry layer, filling each cup about 2/3 of the way to the top. There will be a little extra leftover mixture in the blender, but that’s good!
  7. Put the popsicles in the freezer for an hour.
  8. Meanwhile, do not clean out the blender. Leave the leftover mixture and then add in 1/2 of the small roasted beet plus 1/4 cup strawberry jam. Blend until smooth.
  9. Once the 2nd strawberry layer is thoroughly frozen, pour on the darkest top layer, filling each cup all the way to the top.

Put the popsicles in the freezer for two hours…then, devour!

*Notes: To roast a small beet, preheat oven to 425 degrees. Peel the beet then wrap in aluminum foil with a teaspoon of coconut oil. Bake for 45 minutes, then let cool in the fridge before adding to popsicles!
